오늘같이 비가 많이 오는 봄 날씨에는 오후에 집이나 사무실 앞 커피 바에 들어가 책 보면서 커피 마시는 게 취미라면 취미였다. 덥지도 않고, 춥지도 않은 딱 좋은 온도에 시원하고 선선한 빗소리 들으면서 책 보거나 메모하는 게 내 나름의 스트레스 해소 방법이고 평소에 블랙이나 아메리카노만 먹는 내가 우유가 들어간 카푸치노를 드물게 먹는 날이다.
요새는 아예 그러지를 못하니 비가 오는 날이면 우산을 쓰고 나가서 카푸치노를 사 온다. 집 근처에는 시카고 커피 씬(scene)의 자랑인 인텔리젠시아(Intelligentsia)의 바가 있는데, 인텔리젠시아 커피는 한국에는 시카고를 사랑하는 조수용 대표와 매거진B를 통해 잘 알려진 브랜드이기도 하다.
1995년에 처음 문을 연 인텔리젠시아는 25년 동안 고품질의 원두만을 직접 조달해 최상급의 커피를 만들어 파는 “third-wave” 커피 브랜드 중 하나다. 서부에 Philz와 Blue Bottle, 그리고 Stumptown이 있고, 동부에 La Colombe이 있다면 중부에는 인텔리젠시아가 있다 (아이러니하게도 현재는 유럽계 홀딩회사인 JAB Holdings가 인텔리젠시아, 스텀타운 둘 다 소유하고 있다).

어렸을 때부터 인텔리젠시아 커피는 시카고 사람들이 자부심을 느끼는 커피 브랜드라는 것을 쉽게 알 수 있었다. 시카고에서 커피를 좋아하는 사람이라면 칭찬이 끊이지 않았기 때문이다. 시카고 주변 커피숍들은 인텔리젠시아의 원두로 커피를 만들기도 했기에 인텔리젠시아 바가 근처에 없더라도 인텔리젠시아의 원두는 먹어볼 기회가 자주 있기도 했다.
내가 다닌 일리노이대학교 어바나샴페인 캠퍼스(UIUC)에 위치한 Caffe Paradiso. Intelligentsia 원두를 사용했다.
인텔리젠시아 커피를 좋아하는 이유는 단순하다. 인텔리젠시아 커피는 맛있고, ‘시카고’ 커피이며 (내 고향이다), 중간 브로커를 거치지 않고 생산자로부터 직접 커피를 수입하는 몇 안 되는 브랜드이기 때문이고, 원두를 포함해 우유와 그 외 원재료들을 최상품들로 구성하는 몇 안 되는 브랜드이기도 하다. 그리고 다른 커피 브랜드가 운영하는 매장보다 인텔리젠시아 커피 바의 경험이 훨씬 더 마음에 들기 때문이다. 나는 스타벅스도 좋아하고, 인텔리젠시아의 모회사인 Peet’s Coffee(인텔리젠시아는 JAB의 손자회사다)의 아메리카노도 너무 좋아하지만, 인텔리젠시아 바에서 직접 먹는 커피는 비교할 수 없을 정도로 맛있다. 인텔리젠시아는 모든 면에서 가치를 타협하지 않는 브랜드다. 그래서 그들은 규모를 늘리지 않기도 하고 (여전히 시카고, 뉴욕, LA를 포함해 13곳이 전부다), JAB에 매각하고 나서도 브랜드를 유지할 수 있는 이유다.
기업은 돈을 벌기 위해 존재하는 자본주의의 장치이긴 하지만, 그 가운데서도 지속가능성을 영위하고 생산자와 수요자를 포함한 가치사슬에 있는 모든 구성원을 행복하게 하는 기업은 존재한다. 의류계에서 파타고니아(Patagonia)가 있다면 커피계에는 인텔리젠시아가 있다. 인텔리젠시아는 돈 잘 버는 기업이 아니라, 모두가 행복한 기업을 만드는 기업이다 (돈도 잘 벌 거다. 😊)
코로나 19로 아쉽게 직접 바에 방문해 커피를 마시는 경험은 당분간 누리지는 못하겠지만, 여전히비 오는 날이면 인텔리젠시아 카푸치노를 찾는다.
만일 코로나 19가 다행히도 곧 잠잠해진다면, 시카고 여행을 꼭 한 번쯤은 오는 것을 권하고 싶다. 나는 여기서 20년을 넘게 살았어도 여전히 시카고를 사랑하고 이곳에서 사는 게 정말 행복하다. 다만, 파리나 서울, 뉴욕, 베이징, LA 등과 같은 화려한 도시를 선호한다면 시카고는 하루 이틀 지나면 조금 지루할 수도 있겠다. 뉴욕이나 서울보다는 느리지만, 안정감 있게 움직이는 도시니까.

The history of specialty coffee in Korea began with three cafes, namely Terarosa Coffee (테라로사 커피), and Namusairo (나무사이로) in 2002, and Coffee Libre (커피 리브레) in 2009.
These three cafes not only introduced specialty coffee to the Korean coffee market, but also contributed to promoting Korean coffee culture to the world by interacting with experts on the global specialty coffee stage. In 2008, Terarosa Vice President Yunsan Lee (이윤선) was appointed as the first judge of Cup of Excellence in Korea, and introduced various specialty coffees, including Ninety Plus Coffee, rare auction lots and micro-batch Geisha varietals. In 2013, Korea Brewing Coffee Champion Jeong In-seong (정인성) achieved a record runner-up result in the Sydney World Brewers Cup Championship using a Panama geisha from Seoul-based brand Namusairo (나무사이로).
In 2008, Seu Pil-hoon (서필훈), an employee of Cafe Bohemian (카페 보헤미안, 1990 – 2021) in Anam-dong, became the first Korean to obtain Q-Grader accreditation, a coffee appraisal qualification issued by the Specialty Coffee Association of America (SCAA). A number of experts, Jun-ho Choi (최준호) quality control manager at SPC Group, and Gil-jin Kim (김길진), a Q-Grader judge, also started in the coffee business around this time. Seu Pil-hoon (서필훈), after establishing Coffee Libre (커피 리브레) in 2009, was invited by Yuko Itoi, the godmother of the Japanese specialty coffee industry, to become the second Cup of Excellence judge in Korea. Shortly after, he was joined by El Cafe Coffee Roasters (엘카페 커피 로스터스) and Momos Coffee (모모스 커피), together building the foundation of specialty coffee in South Korea.
Momos Coffee, opened near Oncheonjang Station (온천장역) in Busan (부산), has grown into one of the largest specialty brands not just in the Gyeongnam province, but across the country. Started by Q grader certified Lee Hyun-ki (이현기) he inspired a coffee revolution in the region, influencing a wave of other brands to enter the scene; early front runners Blackup Coffee (블랙업 커피) and In Earth Coffee (인얼스커피) were shortly followed by Werk Roasters (베르크 로스터스) and Hytte (히떼). Busan specialty coffee, led by Momos, spurred the development of regional coffee revolutions, including Coffee Place (커피 플레이스) in Gyeongju (경주), Told a Story (톨드어스토리) in Daejeon (대전) and later on Coffee Temple (커피 템플) in Jeju (제주).
Following the success of the first generation of specialty coffee, a second wave of unique brands followed shortly after including Hell Cafe (헬카페), Mesh Coffee (메쉬 커피) and Napoli-style espresso bar Leesar Coffee (리사르 커피). Other cafes to mention in this post-2010 boom include 502 Coffee Roasters (502 커피 로스터스), Coffee Jumbbang (커피쩜빵, now Lowkey, 로우키), Milo Coffee Roasters (밀로 커피 로스터스) and the aforementioned Coffee Temple (커피 템플). Some of the signature menus created during this period, for example Temple’s Yuja Americano (유자 아메리카노) or Milo’s Mont Blanc (몽블랑) are still celebrated and enjoyed to this day.
