Colonel Sanders would eat here if he were still alive. When this place opens on May 25 (I tried to go this weekend but a sign said they’d be opening NEXT weekend – and also that they need waitresses) I will be there with my fingers crossed in hopes that that they’ve properly imported the taste of Kyochon chicken in Korea.

There’s not really a name for the style of fried chicken that’s taken off like gangbusters in Korea. Over there they call it “Kyochon-style”, obviously after the national chain that’s been most successful in bringing this style of fried chicken to the masses. Seems as though here some people call it KFC, for Korea Fried Chicken. Both are a bit disingenuous – Kyochon most likely didn’t invent the style, and this is just one of many, many fried chicken preparations you’ll find on a tour of Seoul’s tens of thousands of hole in the wall fried chicken joints.

But it is definitely one of the most delicious. The NY Times did a good job explaining the difference between Kentucky Fried Chicken and Kyochon style (http://www.nytimes.com/2007/02/07/dining/07fried.html?ex=1328504400&en=69267e357f603cce&ei=5088&partner=rssnyt&emc=rss ) :

“Many Asian cooking traditions include deep-fried chicken, but the popular cult of crunchy, spicy, perfectly nongreasy chicken — the apotheosis of the Korean style — is a recent development.

“For crunch, American-style fried chicken relies on a thick, well-seasoned crust, often made even thicker by soaking the chicken pieces beforehand in buttermilk. When that crust is nubbly and evenly browned, and the chicken meat is cooked through, the chicken is sublime. But too often, the flesh is still raw when the crust is cooked, or the skin never cooks all the way through, leaving a flabby layer of skin between the meat and the crust.

“Korean-style fried chicken is radically different, reflecting an Asian frying technique that renders out the fat in the skin, transforming it into a thin, crackly and almost transparent crust. I give this place 5 stars in anticipation that they’ll be able to duplicate the taste of Kyochon joints Seoul. This remains to be seen, however. Korean chickens are naturally smaller than their American brethren, so it’ll be interesting to see how Kyochon tackles this issue. As the NYT has mentioned, other mom-and-pop restaurants in New York serving Kyochon style chicken offer just wings, which are not as thick as the relatively massive American chicken breast or thigh.

미국 물가 감안해서….. 생각해도 한국에 비하면 너무 비싼 가격의 치킨값이지만
